Ingredients Serving: 5

  1. Thattuvadai or papdi 200 gms
  2. Carrot 200 gms
  3. Beetroot 100gms
  4. Onions 2
  5. Green chillies 5
  6. coriander leaves 1 bunch
  7. Pudina 1 fistful
  8. Mango Ginger 1 inch
  9. Salt accordingly
  10. Lemon juice 2 tablespoons
  11. Red chillies 10
  12. tomatoes 2
  13. Garlic 4 pods
  14. Tamarind 1 inch
  15. Coconut Oil 2tablespoon

Instructions

  1. Green chutney:- Grind green chillies, coriander leaves, mint leaves,mango ginger and salt to a fine paste in a blender. Mix lemon juice and collect separately.
  2. Red chutney :-Saute red chillies,1 sliced onion, tomatoes,garlic,tamarind in 1 tablespoon coconut oil and blend to a smooth paste with adequate salt.
  3. Vegetable mix:- Grate beetroot and carrot to thin juliennes. Slice 1 onion. Mix all together with lemon juice and coconut oil.Do not add salt otherwise it will start leaving water.
  4. Arrange all the ingredients.
  5. Divide the thattuvadais into 2 portions. Apply green chutney on a one side in one portion and red chutney on one side in the other portion
  6. Place a tablespoon full of vegetable mix over the green chutney laden thattuvadai. Cover it with the red chutney laden thattuvadai.
  7. It will be like a sandwich- spicy and tangy. It has to be chewed as a whole. The spices may sometimes bring tears in your eyes.
