Cut the brinjal in long strips and soak it in water.
Grind the sesame seeds, sambar powder and coconut in the mixer till it get gets mixed well.
Take a kadai, heat oil then add the mustard seeds, udad dal, asfoetida and fry the curry leaves.
Then add the brinjal, turmeric powder, salt and let it dry. Keep the lid closed and sprinkle water, then leave it for 3 mins.
Add the masala, coriander leaves and fry it for a few minutes.
Serve it hot with roti or chawal.
