ABOUT Spicy Brinjal Fry RECIPE

This is an easy to make side dish with few ingredients.Tastes awesome with curd rice.

Ingredients Serving: 4

  1. Brinjal 5.
  2. 1 big onion.
  3. 2 medium tomato.
  4. Few curry leaves.
  5. Salt to taste.
  6. 1/2 tesp turmeric powder.
  7. 2 tesp chilli powder.
  8. Oil 4 tbsp.
  9. Seasoning: mustard seed 1/4 tesp,urad dal 1/2 tesp and cumin seed 1/2 tesp.

Instructions

  1. Slice brinjal length wise and soak in water to avoid browning.
  2. Finely chop onion and tomatoes.
  3. Place Kadai with oil on medium flame.
  4. Add the seasoning,and once it splutters add curry leaf.
  5. Now add chopped onions and tomatoes saute till slightly mushy.
  6. Add in the brinjal and mix well.
  7. To it add salt,turmeric and chilli powder.
  8. Saute till well combined,put flame on low and cook with lid closed.
  9. After 5 minutes open stir and continue to cook with lid closed on low flame.
  10. After another 5 minutes open and stir fry till roasted.
  11. Serve as a side dish for rice or chapati.
