Garlic flavoured spinach gravy
Blanche the palak and dip it into iced cold water.
Once cold chop half of the palak and puree the remaining half
In a pan heat oil add cumin and half of the chopped garlic. Saute till brown. Add onions fry till golden
Add coriander powder and turmeric and salt. Mix. Add the chopped spinach mix and cook for 3 to 4 min
Add curd and give a stir. Now add the pureed palak and mix. Cook for 3 to 4 min
In another pan heat oil. Add dried red cilli and sesame seeds. Add remaining garlic. Fry till golden
Pour over the spinach gravy. Serve hot with roti
