Thandai, is an Indian cold drink prepared with a mixture of dryfruits, spices and some seeds. Here is the eggless cake with infused flavour of Thandai , which gives you a unique taste... its very spongy, yummy and rich cake. Enjoy yummy cake as a yummy snack

Ingredients Serving: 5

  1. Dry Ingredients
  2. 21/2 cup all purpose flour
  3. 2 tsp baking powder
  4. 1 tsp baking soda
  5. 1/4 tsp salt
  6. Wet Ingredients
  7. 1 tin or 396 gm condense milk
  8. 1/4 cup butter (room temperature)
  9. 3 tbsp thandai syrup + 1/2 cup milk
  10. 3/4 cup warm milk or as needed
  11. 1/2 cup olive oil
  12. 1/2 tsp vanilla essence/rose essence
  13. Oil for greasing

Instructions

  1. Preheat the oven at 350 F
  2. Grease the tray with oil/butter and line with parchment paper
  3. Blend Thandai syrup with 1/2 cup milk . (You can use here left over thandai also)
  4. Take a large bowl, sieve all the dry ingredients together ...
  5. In another bowl , add oil,butter and condense milk...Whisk the mixture for 6-8 minutes or until it become creamy. (You can use electric beater on high speed for 3-4 minutes).
  6. now add vanilla essence and thandai mixture and whisk/beat it for more 4 minutes..
  7. Now add dry flour into wet ingredients.. Start adding dry flour mix and milk alternatively in 3 turns to this wet mixture. Add 1 part of flour mix and 1/3 cup of milk to the wet mix and stir well.
  8. Now add 2 part of flour mix and 1/3 cup of milk and stir well. Add remaining part flour and milk and mix well. Make sure that the ingredients of cake batter are well mixed.
  9. Now we have different food colors for colorful cake.. You can take any color as per your choice.. Here i have, red , green , blue, Orange and yellow color..
  10. I have divided the batter into 6 parts ..5 for colorful cake batter and one for normal cake
  11. Now pour the cake batters one by one into greased pan according to your choice of colors. Tap the pan on counter to make sure batter is evenly distributed in the pan.
  12. Place the pan in oven and bake it for 40-45 minutes.
  13. Sometime time depend on the quality of oven. After 40 minutes you can check by tooth pick. If tooth pick comes out clean then cake is ready otherwise put it in the oven for more 5 minute or until tooth pick become clean or crumbled.
  14. Once fully baked, take the cake out. Let is rest for 8-10 minutes. Then carefully take it out and place on cooling rack.... Let it be cooled and cut the slices and enjoy colorful Thandai cake.. You can enjoy this cake with tea.
