Ingredients Serving: 4

  1. Broccoli florets 250gms
  2. 1 cup cubed onion
  3. 1 cup cubed capsicum
  4. For marination :
  5. 100gms hung curd
  6. 2tbsp ginger-garlic paste
  7. 1tsp cumin powder
  8. 1tsp red chilli powder
  9. 1tsp cardamom powder
  10. 1/4tsp turmeric powder
  11. 1tsp all spice powder
  12. Juice of 1 lemon
  13. For gravy
  14. 1tbsp oil
  15. 5-6 cloves of garlic
  16. 1 inch ginger peeled
  17. 1 small onion
  18. 2 ripe tomatoes
  19. 3/4 cup walnuts
  20. 2-3 large cubes of butter
  21. Salt
  22. Red chilli powder
  23. 1tsp cardamom powder
  24. Pinch nutmeg powder
  25. 1/2 cup tomato ketchup
  26. 1tsp all spice powder
  27. Cream to garnish
  28. Kasuri methi

Instructions

  1. Blanch the broccoli florets in lukewarm water and strain and pat dry
  2. In a mixing bowl mix all the ingredients for marination and mix in broccoli florets and cubed onions and capsicum
  3. Keep aside for couple of hours
  4. Mix little salt and arrange the vegetables on skewers
  5. Grill the vegetables in a microwave or on a gas tandoor till cooked from inside and crispy from outside.
  6. For gravy
  7. Pressure cook tomatoes,ginger,garlic and onion till 2 whistles and switch off the flame
  8. Soak walnuts in lukewarm water for a minimum of 2 hours
  9. Strain the pressure cooked vegetables and grind them to a fine a paste along with the walnuts
  10. In a nonstick pan put oil and pour in the gravy mixture
  11. Cook on a low flame , stirring frequently until the gravy leaves the sides of the pan
  12. Now add in salt and other spices and mix
  13. Add little water and adjust the consistency of the gravy
  14. Cook for another 5 minutes and add in tomato ketchup and prepared broccoli tikka
  15. Garnish with cream and kasuri methi
