ABOUT Malpua with rabdi RECIPE

Malpua is a traditional Rajasthani dessert specially made on holi festival. I make these malpua with milkmaid and milk powder and served with rabdi . Garnish with some fresh rose petals, pistachio and almond.

Ingredients Serving: 5

  1. For sugar syrup:-
  2. 1 cup sugar
  3. 1/2 cup water
  4. For Malpua :-
  5. 1/2 cup wheat flour
  6. 1/4 cup semolina(suji)
  7. 2 tbsp milk powder
  8. Pinch of baking powder
  9. 1 tbsp crushed fennel seed(sanuf)
  10. 1 tbsp yogurt
  11. 1/4 cup milkmade sweetened condensed milk
  12. 1/2 cup Milk
  13. for rabdi:-
  14. 2 CUP MILK
  15. 1/2 cup milkmade sweetened condensed milk
  16. 1/2 cup crumbled paneer
  17. 1 tsp cardamom powder
  18. 2tbsp chopped dry fruits(pistachio+almond)
  19. 6-8 saffron strands
  20. Rose petals,chopped dry fruits for garnish

Instructions

  1. For sugar syrup:-
  2. In a pan dissolve sugar in water on medium flame for 2 minutes. No need to any thread consistency.
  3. For Malpua :-
  4. In a bowl mix all ingredients mention in Malpua except ghee and mix it. Keep aside for 10 minutes.
  5. Now heat ghee in a wok on medium flame.
  6. Take 3 tbsp of batter and pour gently in ghee and fry it.
  7. Fry it till crisp or golden in colour on low to medium flame by flipping it.
  8. Now place them in warm sugar syrup and just coat it with the syrup.
  9. Take out them in a serving plate.
  10. For Rabri:-
  11. In a wok boil milk on medium flame.
  12. Add milkmade sweetened condensed milk and stir it.
  13. Now add Crumbled paneer and mix it.
  14. Add cardamom powder, saffron strands.
  15. Cook it till milk reduces half of the quantity and consistency will be semi thick.
  16. In last add chopped dry fruits.
  17. When serving pour rabri on malpua and garnish with some fresh rose petals and chopped dry fruits.
