ABOUT Mathura Ke Pede RECIPE

Holi assumes a very special place in Mathura and the pedas from Mathura never fails to delight the taste buds of anyone who tastes it. Traditionally its made with Bhoora, which is prepared with sugar, thus eliminating the usage of sugar while preparing the pedas. Bhoora gives these pedas a very different texture and taste. Here is a version with home made bhoora

Ingredients Serving: 10

  1. for bhoora:
  2. Sugar - 1 kg
  3. Water - 350 gms
  4. Milk - 1 table spoon.
  5. Ghee - 1 tea spoon
  6. for mathura pedas:
  7. mava /khoya 250 gms at room temperature
  8. Bhoora 200 gms
  9. Ghee 3 tablespoon
  10. green Cardamom powder 2 tablespoon

Instructions

  1. preparing bhoora:
  2. Take a pan and put sugar and water in it.
  3. boil and stir the mixture continuously for 2-3 minutes.
  4. Once the mixture starts to boil add milk to it.
  5. Cook the mixture for 8-10 minutes
  6. when the mix turns extremely thick and transparent/sticks to the sides of the pan, take off heat
  7. transfer the mix onto a plate and constantly stir it to cool it down
  8. bhoora is ready to be used. it should be refrigerated and stored airtight
  9. mathura pedas :
  10. crumble the mava roughly and add it to a non stick pan
  11. on Low heat start to sauté the mava for 2-3 minutes
  12. start adding ghee gradually to the mava so that it doesn’t burn or stick to the pan
  13. then as the mava softens, increase the heat slightly and keep stirring constantly till the mava turns light brown and then darker
  14. as the mava turns brown add the cardamom powder and mix
  15. next add the bhoora (reserving 2 tablespoon aside)and blend all the ingredients well on Low heat
  16. when the mixture is dried up and leaving the sides of the pan, take off heat and let cool
  17. when the mixture is cool enough to handle, make pedas of the shapes /sized you prefer
  18. coat all the pedas with the bhoora reserved and enjoy!
  19. store them airtight
