Ingredients Serving: 10

  1. All purpose flour 1 kg
  2. Desi ghee 1 1/2 cup
  3. Water 1 1/2 cup
  4. Sugar 4 cup
  5. Salt 1/2 tsp
  6. Cardamom powder 2 tsp
  7. Ghee / cooking oil for deep fry

Instructions

  1. Sieve and take all-purpose flour.
  2. Add ghee in a wide pan.
  3. Add some water
  4. Combine sieved all-purpose flour.
  5. Add cardamom powder and salt.
  6. Mix well.
  7. Sprinkle water little by little if necessary.
  8. Prepare a soft dough by kneading well.
  9. It is like soft chapathi dough consistency.
  10. Close a lid / cloth, rest it for 15 minutes.
  11. Meanwhile take sugar, add 2 cup water and prepare sugar syrup.
  12. Boil the sugar syrup until get the 1 string consistency.
  13. Check the syrup in between thumb and index finger.
  14. Make lemon sized balls from it.
  15. Make it little flat like pattis by using the palm.
  16. Heat oil or ghee (me used desi ghee) in a frying pan.
  17. Now deep fry the pattis by sauteing in medium flame.
  18. Fry until golden brown or bubbles are stopped.
  19. Once they are fried remove on kitchen paper or towel.
  20. Break and check the inner layer without using beaking soda or powder, fry all in batches.
  21. Dip them in the hot sugar syrup, allow it 30 seconds.
  22. Take them out, place them on a banana leaf.
  23. Dip all and place them one by one.
  24. After 3-4 minutes flip all.
  25. Serve smooth and crispy saat.
