Veggies curry is so healthy and tasty. It is flavourful havyaka cuisine, without onion, garlic and toor dal.
Simply awesome.
Wash and chop all the veggies.
Boil the tamarind soaked water with a ltr of water.
When it starts boiling, add the veggies.
Add salt.
Stir once. .
Cover the lid and cook for 7 minutes in high flame.
Open the lid and check the cookness.
Heat oil and fry all the spices in low flame, till good aroma.
Add asafoetida, saute once.
Turn off the flame, add turmeric powder and saute well.
Add curry leaves.
Allow it to cool.
Grind smoothly by adding water and coconut.
Pour the ground masala into cooked veggies.
Bring it to boil, if necessary add water.
Stir often, allow it to boil in low flame for 7-8 minutes.
Prepare seasoning.
Pour into a vessel.
Add curry leaves.
Close the lid for 5 more minutes.
Open the lid, mix well and serve with rice, idli and so on.
