ABOUT Tiwan( Sindhi style bhuna gosht) RECIPE

A traditional recipe of my mother in law. This way of making mutton is found in most sindhi families without use of mixer or grinder.An absolute delight for non vegetarians. It has a unique taste and aroma as mutton is sauteed for long to give that perfect color and texture to the mutton.

Ingredients Serving: 2

  1. Clean mutton 500gms
  2. Onion 3 chopped
  3. Tomatoes 1 big chopped
  4. Garlic 8-10 chopped
  5. Ginger 1 inch piece chopped
  6. Green chillies 2 chopped
  7. Black pepper 2
  8. Clove 2
  9. Cardamom 1 piece
  10. Salt to taste
  11. Oil 1 cup
  12. Red mirch powder 1tsp
  13. Meat masala 1 tsp
  14. coriander powder 1tsp
  15. Few leaves of mint and coriander.

Instructions

  1. Pour oil in cooker and heat it. Add garlic saute for a min. Add khada masala( clove, black pepper, cardamom).
  2. Now start adding onions, green chillies, ginger, tomatoes, mint leaves and mutton pieces. Let the flame be high. Mix well all the ingredients and add very little water( around 1/8 cup). Close the lid and cook for 3 whistles. Switch off the gas and let it cool down.
  3. After the cooker cools down open it and again switch on the gas. Stir Well. Dont worry if it has water still left. Saute it in between.
  4. This is important step as we need to saute it for longer time for perfect taste. It will start sticking to the cooker, one needs to stir well. It will take around 10-15 mins for this step.
  5. When the color has started changing to dark red then we need to add salt, meat masala, ted chilly powder, and coriander powder. Again mix well and now it will give nice flavourful aroma.
  6. Add around 4 tbspn water and then again stir well till all the water dries. Add around 1 1/2 cup water. Check for done ness.
  7. If mutton is still hard one needs to again keep it for whistle other wise can be continued without whistle. On slow flame let it whistle 2 -4 times or as required. Let the cooker cool down and garnish it with fresh coriander leaves.
  8. The gravy should be thick and not watery. Serve hot.
