Life is uncertain, Eat deserts first. For me Comfort food is The food that provides Nostalgic or sentimental Value to me. Kheer which my mom was making for me when I was upset after not doing well in exams was the first comfort food introduced to me. So this Healthy Couscous Kheer is dedicated to my mom.

Ingredients Serving: 3

  1. Cooked Couscous 1 bowl.
  2. Milk 3 bowls ( heated)
  3. Sugar 1/2 cup.( to taste)
  4. Condensed milk 4 tbsp.
  5. Cardemom powder 1/2 tsp
  6. Vanilla essence few drops.
  7. Almonds, Cashews blanched and Chopped for garnish.
  8. Raisins 2 tbsp.

Instructions

  1. You can cook Couscous in advance by adding 1 to 1.5 ratio of Couscous and water.
  2. Add boiling water and butter ( unsalted for this recipe) to Couscous and cover the bowl for 15 minutes. Fluff with fork.
  3. Add milk( add malai too) to the cooked Couscous and cook . Add Sugar too. Add raisins.
  4. After it thickens add condensed milk and cook again.
  5. Add Cardemom powder.
  6. Add Vanilla essence and let it cool to the room temperature.
  7. Serve with garnish of dry fruits.
