ABOUT Schezwan noodles with chilly chicken RECIPE

A spicy bowl of noodles with chicken, Indo chinese style is a way of comfort food for me.

Ingredients Serving: 2

  1. Schezwan sauce :
  2. Dry Red Kashmiri Chillis - 18-20
  3. Sesame Oil or any refined Oil - 3-4 tbsp
  4. Garlic Cloves, chopped - 10
  5. Ginger, chopped - 1/2 tbsp
  6. Soy Sauce - 1/2 tsp
  7. white vinegar - 1 tbsp
  8. tomato puree - 1.5 tbsp
  9. Salt to taste
  10. Noodles:
  11. Onions (sliced) - 1
  12. Carrots (chopped) - 1/4 th cup
  13. Beans (chopped) - 1/4 th cup
  14. Bell peppers (chopped) - 4 tbsp
  15. Spring onion (chopped) - 2 tbsp
  16. Boiled noodles - 2 cups
  17. Schezwan sauce - 4 tbsp
  18. Salt
  19. Sugar - 1 tsp
  20. Chopped garlic - 1 tsp
  21. Chopped green chillies - 1/2 tsp
  22. Refined oil
  23. Chilly chicken ,For the marination :
  24. Boneless chicken - 200 gm
  25. Garlic paste - 1 tsp
  26. Ginger paste - 1/2 tsp
  27. Cornflour - 2 tbsp
  28. Maida - 3 tbsp
  29. Soy sauce - 2 tsp
  30. Salt
  31. Refined oil (for frying)
  32. For the tempering :
  33. Chopped garlic - 2 tsp
  34. Chopped green chillies (dipped in vinegar) - 2 tbsp
  35. Soy sauce - 1 tbsp
  36. Ajinamoto (optional) - 1/2 tsp
  37. Cornflour - 1 tbsp
  38. Salt
  39. Refined oil

Instructions

  1. For the schezwan sauce, Soak Chillis in hot water for 30 minutes and grind to paste. Grind fine or a little coarse according to prefernce. In a pan, heat the oil
  2. Now add garlic , ginger and saute for a minute. Now add tomato purée, soy sauce, vinegar, salt with the ground red chilli paste. Add little water and simmer it for 5 min , co cool till the oil separates.
  3. For the noodles, Heat a wok with some oil. Add chopped garlic, ginger and green chillies. Once they smell, add sliced onion.
  4. Saute for few minutes and then add the chopped vegetables. Cook for few minutes and then add the Schezwan sauce. Add salt and sugar. Stir and add the boiled Noodles, mix and serve.
  5. For the chilly chicken, Cut the chicken into pieces. Whisk the egg white, mix rest of the ingredients mentioned under "marination".
  6. Add the chicken pieces into the marinade and leave it for 30 minutes. Deep fry the marinated chicken pieces in hot oil and keep aside.
  7. To make the tempering, heat little oil in a wok, add the chopped garlic, green chillies. Add the soy sauce, salt and mix on high flame.
  8. Then add water and let it boil, while dissolve some cornflour in little water. Now add this and ajinamoto to the boiling gravy to make it thick.
  9. Add the fried chicken pieces and let the gravy coat them, check for seasoning and serve with the noodles.
