ABOUT Vegetarian Shepherd's Pie RECIPE

Always a great comfort food, with loads of veggies, this version of Shepherd's Pie with addition of sweet potatoes has a rich-tasting.

Ingredients Serving: 4

  1. 2 large potatoes, peeled and diced
  2. 1 small sweet potato, peeled and diced
  3. 1 carrot, diced into small pieces par boiled
  4. 1 cup cauliflower, cut into bite-sized pieces parboiled
  5. 1/2 cup red kidney beans/rajma boiled
  6. ½ cup boiled corn
  7. 1 ½ cups boiled green beans
  8. 3 Tablespoons whole wheat flour
  9. 2 tablespoons butter
  10. 1 Onion, chopped
  11. ¼ cup tomato paste
  12. 2 tablespoons olive oil
  13. 2-4 Tablespoons salsa sauce
  14. ¼ cup tomato paste
  15. 1 Tablespoon chilli powder
  16. ¼ teaspoon garlic powder
  17. ¾ cup water
  18. ½ teaspoon salt
  19. 1 Teaspoon Chilli Flakes
  20. Grated processed and mozrella cheese as required
  21. Butter chunks few, to spread over
  22. Bread/ garlic bread to serve with

Instructions

  1. Steam potatoes and sweet potato (until soft). This should take about 5-7 minutes.
  2. Drain and mash potatoes. Add 2 tbsp butter and salsa until the consistency is smooth and creamy. Set aside.
  3. Preheat oven to 180 degrees for 10 minutes.
  4. Heat a heavy bottom pan over medium heat.
  5. Add the oil and onions. Stir and cook until onions are translucent, about 5 minutes.
  6. Stir in parboiled carrots, cauliflower, green beans, corn, kidney beans, chilli powder, garlic powder, tomato paste, and flour.
  7. Mix until well blended. Add the water, then stir, cover, and cook for 5 minutes.
  8. Sprinkle salt over vegetables and blend in with the help of masher.
  9. Remove pan from heat. Transfer this mixture into oven proof baking dish.
  10. Mix in grated cheese.
  11. Smooth the potatoes & salsa mix over the vegetables & cheese mix.
  12. Sprinkle chilli flakes over the top. Put few pieces of butter over mixture.
  13. Bake for 45 minutes or until the top becomes brown.
  14. Serve with garlic/ white/ wheat bread.
