It can be served with hot parantha.
Chop onions, potatoes and cauliflower and keep aside.
In a wok, take mustard oil and heat it well.
Add cumin seeds and let it crackle.
Add asafoetida and then add chopped onions and green garlic.
Sauté till translucent and then add grated ginger.
Sauté for a min and then add potatoes, cauliflower and peas.
Add salt and turmeric powder and mix well.
Sauté well for 3-5 mins on medium flame.
Then cover with lid and cook for another 5 mins till the veggies are softer.
Add chopped tomatoes and green chillies.
Add coriander powder and red chilli powder and mix well.
Cover and cook for 3-4 mins till tomatoes are soft.
Serve hot with your favourite rice or roti.
