ABOUT Gud ka parantha RECIPE

Gud or jaggery ka parantha is traditionally sindhi or multani breakfast recipe.This incredible , delicious ,energetic parantha was always given to me in my childhood by my paternal grandmother as Gud is loaded with iron and unrefined sugar . This recipe does not need loads of ingredients but lot of skill is needed while stuffing the gud into the paranthas. Now here in my recipe i have also incorporated the goodness of cumin and fennel because these two ingredients balance the heat producing effect of gud in our body.

Ingredients Serving: 4

  1. Whole wheat flour (atta) 2 cups
  2. Jaggery (gud)powder 8 to 10 teaspoons
  3. Desi ghee 2 tablespoons
  4. Cumin(jeera) 1 table spoon
  5. Fennel(saunf) 1 table spoon

Instructions

  1. Keep gud, cumin ,fennel, desi ghee ,whole wheat flour ready .
  2. Knead the flour into regular dough .let it stand for 10to 15 minutes.
  3. Make equal sized balls of the dough.
  4. Meanwhile take powdered jaggery and mix with cumin and saunf.
  5. Now to make parantha , roll two balls of equal sized chappatis by rolling pin.
  6. Apply ghee on one chappati and keep the gud mixture in the centre .It should not be more than 2 teaspoons.
  7. Place another chappati on it carefully and seal the edges with a fork or simply with your fingers only..
  8. You can very well see here in the picture.
  9. Roll the stuffed parantha lightly and slightly more.
  10. Take preferably flat tawa .
  11. Keep the tawa on the medium flame and preheat it.
  12. Now roast it on a flat tawa on a medium flame from both the sides by applying little ghee .
  13. Press it little by a spoon to make it brown on both the sides
  14. You have to roast the paranthas on medium to low flame only to avoid charring of the gud inside the paranthas.
  15. Take the paranthas off when you find both the sides are properly roasted.
  16. Enjoy this healthy aromatic delicious paranthas preferably with white butter .
