Kachori is staple breakfast from uttarpradesh and madhya pradesh .
First for kachori crust ;in a big bowl take all purpose flour And semolina . Now add Oil/ clarified butter , salt and carrom seeds . Mix all ingredients well and make crumbly texture . Now add water and make soft dough. Cover this dough with muslin cloth and keep it aside.
Now for stuffing - in a grinder , take boiled peas and grind it corasly along with ginger and green chillies .
Now in a pan take 2 tsp oil , then add roasted cumin powder ,mango powder , black pepper powder and black salt as per taste . Then add grinded peas and cook it for about 3-4 minutes. Stuffing is ready .
Now take crust dough and make lemon size balls with it .
Take a ball and Roll this ball with roller pin and put stuffing on center .
Close all sides and make a pocket .
Press this pocket with fingers gently and make small disc . Repeat this process with remaining dough .
In a kadai take oil ,when oil is getting medium hot ; fry these kachori on slow flame .
Green peas kachori are ready . Serve hot with green chutney .
