Spinach cakes or spinach vadis are quite popular dish in Maharashtra, Gujarat region. It is prepared in various ways by altering few ingredients like flour, spices. In this recipe I have used wilted spinach leaves, gram flour and rice flour seasoned with spices and balanced with jaggery and lemon juice. These are shallow fried or deep fried and eaten for breakfast or with dal rice. These tastes awesome. Add more chilli powder or green chillies if you want it spicier.
Wash and finely chop spinach leaves. In a wok, heat a teaspoon of oil. Add chopped leaves and salt. Cook until they wilt and all water evaporates.
In a bowl take Gram flour, Rice flour, cumin, coriander powder, red chilli powder, lemon juice, garam masala, salt, asafoetida, oil, white sesame seeds, grated jaggery, ginger garlic paste and Coarsely ground green chillies. Mix well.
Add wilted spinach leaves. Mix it well and make a dough. It will be little sticky. If its too sticky add little gram flour.
Apply some oil or water on hands. Divide it into 2-3 cylindrical rolls approx. 4-5 inches long.
Arrange them on greased plate
Steam it in a steamer or presser cooker on medium flame. (If using pressure cooker, cook for 3 whistles and in steamer cook it for 20-22 minutes. Check using toothpick it should come out clean.)
Switch off the flame. Let pressure inside cooker come down naturally.
Let it cool. cut it into a ½ inch thick slices.
In a pan, heat oil. Add sliced spinach cakes or vadis and fry on low flame until golden brown and crisp.
Serve hot with tea, coffee.
