chole bhature is such a famous dish that my family loves them so here is my way of making them at home.

Ingredients Serving: 4

  1. 2 cups [washed and soaked] Chickpeas
  2. Salt
  3. 1 tea bag
  4. 1/4 tsp cumin seeds
  5. 1 tbsp chana masala
  6. 1/4tsp red chilli
  7. 1/4 tsp ground pomegranate seeds [andardana powder]
  8. 4 tbs mustard oil
  9. Green chilli 2
  10. Green coriander leaves [handful]
  11. 2 tbsp ginger [cut into juliennes]
  12. 5 cup maida
  13. Salt
  14. 1/4tsp sugar
  15. 4 boiled potatoes
  16. 1 cup home made crumbled panir
  17. 2 cup panir water
  18. Oil for frying

Instructions

  1. Boil the chick peas with salt and the tea bag, in a pressure cooker.
  2. Strain them and keep the water aside for later use.
  3. In a iron kadahi heat some oil and then put strained chana
  4. Add salt, cumin seeds, anardana powder, chana masala
  5. Stir well
  6. Add little chana water and cook for few more minutes.
  7. Put green chillies, coriander leaves, ginger juliennes, on it.
  8. In another pan heat mustard oil till smoking point.
  9. Pour on Chana and cover it.
  10. Now for the bhature, mix maida, salt, sugar, boiled & mashed potatoes, crumbled panit and 1 tsp of oil.
  11. Knead the mixture with panir water.
  12. Make a smooth dough.
  13. Cover it and keep aside for only 10 minutes.
  14. Now divide the dough into equal parts, roll each roundel into bhature, deep fry them in hot oil. Serve them hot with the chana made earlier.
