ABOUT Spring Onion Parathas... RECIPE

A yummy green veggie variation to the wide variety of parathas. These are so fresh and green. The mild taste of spring onion greens in this makes it taste different from the onion parathas. They make for an ideal breakfast on any day of the week. Infact it is a very good brunch idea too. Add lots of coriander leaves along with it to make it look fresh and green when you take a first bite. Enjoy these with butter and salted lassi to complement it.

Ingredients Serving: 5

  1. Spring onion green bunches 2
  2. Onions thinly sliced 1
  3. Ginger grated 1 tbsp
  4. Salt 1 tsp
  5. Green chillies finely chopped 3
  6. Garam masala 1 tsp
  7. Red chilli powder 1 tsp
  8. Cumin seeds crushed 1 tsp
  9. Coriander seeds crushed 1 tsp
  10. Coriander leaves chopped 1/2 cup
  11. Oil 1 tbsp
  12. Ghee or oil for shallow frying 1/2 cup
  13. FOR THE PARATHA DOUGH ; Wheat flour 3 cups
  14. Salt 1 tsp
  15. Oil 1 tbsp
  16. Water 1 1/2 cups

Instructions

  1. Knead a smooth dough for the parathas using the ingredients mentioned.
  2. Cover it and set aside for 15 minutes.
  3. In a pan, heat oil and add crushed cumin and coriander seeds
  4. Now add green chillies, grated ginger and red chilli powder.
  5. Saute all for a minute.
  6. Now add chopped spring onions and sliced onion.
  7. Saute for one more minute.
  8. Do not cook much.
  9. Adjust salt accordingly.
  10. The green colour should be retained.
  11. Garnish with lots of coriander.
  12. Switch off the gas.
  13. Divide the dough into equal sized balls.
  14. Roll each into small discs.
  15. Place about 2 tablespoons full of stuffing in the centre.
  16. Cover with another disc and roll gently.
  17. Make all the parathas in the similar way.
  18. Roast on a hot griddle or tawa using oil or ghee.
  19. Serve them hot with butter and raita alongside.
