ABOUT Puttu Kadala RECIPE

This is Kerala's traditional breakfast. Very filling and oil free which makes it a healthy breakfast. This energy filled breakfast requires only 5 minutes to get baked. Altogether this is healthy, time saver and filling breakfast.

Ingredients Serving: 5

  1. Red chilli - 2
  2. Mustard seeds - 1 tsp
  3. Curry Leaves - 1 sprig
  4. For seasoning :
  5. Grated coconut paste - 1/2 cup
  6. Salt to taste
  7. Turmeric powder - 1 tsp
  8. Cumin - 1 tsp
  9. Coriander powder - 1 tsp
  10. Kerala Garam masala - 1 tbsp
  11. Red chili powder - 1 tbsp
  12. Tomato - 1 big, chopped
  13. Onions - 3, sliced
  14. Ginger Garlic Paste - 1 tsp
  15. Black gram - 1 cup
  16. For kadala curry:
  17. Grated coconut - 1 cup
  18. Sugar 2 tsp
  19. salt - 1 tsp
  20. Water - 3 Cups
  21. Puttu rice flour - 1/2 kg packet( White puttu flour is available in supermarkets and online)

Instructions

  1. Take a large kadai or vessel and spread the rice flour.
  2. Take a small bowl. Add water. Add sugar and salt and mix till it dissolves.
  3. Add water little by little till you are able to hold the rice flour in your fist and it doesn't break into powder. Please note that the consistency should be of powder only and not like a batter.
  4. Keep the flour aside for 15 minutes.
  5. Take the Puttu steamer. Put sufficient water in the bottom vessel and keep it on the stove for boiling.
  6. Take Puttu cylinder. Place perforated plate. On that, add 1 big tbsp grated coconut. Then drop a ladle full of Puttu flour, then layer it again with grated coconut followed by Puttu flour. Repeat the layers till you reach the top of the cylinder. Place this cylinder on the steamer vessel and steam it for 5 minutes. Please make sure that the steam comes out from the holes of cylinder top.
  7. Remove the cylinder after 5 minutes. Open the lid of the cylinder. Slant the cylinder on a plate. And using a rolling pin slightly push from the perforated plate onto the serving plate. Puttu will come out.
  8. Steps for Kadala curry:
  9. Soak black gram overnight. Pressure cook for 15 minutes adding turmeric powder and little salt.
  10. Take a kadai. Add oil once heated.
  11. Splitter jeera, add onions, Ginger garlic paste and saute
  12. Add tomatoes and saute till soft.
  13. Add coriander powder, red chili powder and saute.
  14. Take a ladle full of black gram and mash it. Add it to the kadai.
  15. Add boiled black gram and coconut paste(grated coconut ground to a paste adding little water) and salt.
  16. Once boiled, add garam masala and switch off the flame.
  17. Season with mustard, curry leaves and red chilly.

What to do if I don't get puttu rice? Can I use regular rice flour? It's one of my favorite and would really want to try making it
