ABOUT Samai koozhu RECIPE

Little millet savory porridge is a sumptuous breakfast. This age old recipe is highly nutritious and cooling too.

Ingredients Serving: 4

  1. I cup little millet, same, sama
  2. 2 cups water
  3. 2 cups butter milk
  4. 4 shallots
  5. Salt to taste
  6. Green chillies slit (optional)
  7. Grated ginger (optional)

Instructions

  1. Wash and clean the little millet
  2. Add two cups of water and set to cooking
  3. Meanwhile whisk the two cups of buttermilk with salt, and grated ginger
  4. Clean and slice the shallot and green chillies and set aside
  5. Keep stirring the millets as they cook and absorb the water
  6. Once the millets are well cooked, remove form heat and cool them down to room temperature
  7. Once cooled add the buttermilk mix well into a pouring consistency
  8. Serve the koozhu topped with chillies and shallots
