Ingredients Serving: 2

  1. 200 grams Jackfruit (Kathal) diced
  2. 2 cups - basmati Rice
  3. 1 - sliced Onion
  4. 1 tbsp - ginger- Garlic paste
  5. 1 cup - Curd (yogurt)
  6. 2 - slit Green chillies
  7. Chilli powder - as required
  8. 2 tbsp-home-made masala
  9. 1/4 bunch - Mint leaves
  10. 1/4 bunch - Coriander leaves
  11. salt to taste
  12. 1/2 - squeezed Lemon
  13. 1 each of whole spices - cardamom, cinnamon, Clove,Bay leaf
  14. 3 cups - water
  15. 1 cup brown onion
  16. 1 tbsp - Ghee
  17. few roasted cashews

Instructions

  1. Wash and soak the rice in the water for 30 minutes.
  2. Now in the pressure cooker or in the heavy bottom vessel heat some oil. Add the whole spices.
  3. Boil the kathal in salt water.Add onions and saute till light brown then add ginger, garlic paste.and dry spices and add boiled kathal
  4. Then add yogurt, chilli powder, masala powder, lemon and curd one by one.
  5. Saute until the oil separates out from this mixture.
  6. Now add the chopped mint and half of chopped coriander leaves.
  7. Add rice, check for salt, mix well and then add boiling water.
  8. Close the lid and when steam comes out, put the whistle and turn to very low flame and switch it off after 10 minutes.
  9. If you are using a heavy-bottomed vessel, just close with the lid when all the water is absorbed by the rice, switch of the flame and after 5 minutes, mix slightly with spatula.
  10. Once it is done let it set for another 15 to 20 minutes.
  11. Now open the lid, mix slowly with spatula or fork.
  12. Garnish with remaining coriander leaves, onions, cashews and add ghee.
  13. Serve with raita.
