Lemon Pie with Orange Sauce and Biscuit Crust

Ingredients Serving: 6

  1. 3 egg yolks
  2. 1/2 egg white (of 1 egg)
  3. 300 gms Citric sugar (Dry citric fruit zest with sugar mixed together and processed in food processor)
  4. 300 gms condensed milk (Nestle Milkmade)
  5. 1/2 cup lemon juice
  6. 1 cup Orange juice
  7. 400 gms butter (Nutrela lite)
  8. Orange and lemon zest
  9. 20 biscuits (digestive biscuits)
  10. Few drops of Vanilla essence
  11. Whipped cream (for garnish)
  12. 1-2 Lemon wedges

Instructions

  1. For crust :Preheat oven at 175 degree Centigrade. Melt 200 gms of butter in a sauce pan and add orange zest to it. Crush at least 15 pieces of biscuits in a bowl. Add melted butter to it. Mix well.
  2. After some while add egg white to it and vanilla essence to it and add sugar and mix well. Apply brown paper and Butter 22 cm pie mould and spread the remaining crushed biscuits in the mould and spread the crust mix. Place the mould in the oven and let it bake for 15 minutes. Remove and place the mould aside to cool.
  3. For Orange Sauce (reduced): Melt butter in the pan and add orange zest in it. Add orange juice in pan and add 2-3 tbsp sugar in it. Reduce the sauce on medium high flame and check the sugar for taste. Keep aside to cool.
  4. For the pie filling: Beat egg yolk in a bowl. Whisk condensed milk in to it and whisk continuously. Continue whisking and add Lemon Juice to it and later add Citric sugar to it and mix well. Add food coloring if needed.
  5. Final Baking: Preheat the oven at 165 degree Centigrade. Spread a layer of orange sauce on the crust and and then pour pie filling batter on to the orange sauce. Place in the oven and bake for 12-15 minutes.
  6. For Serving: Place the pie to chill in the refrigerator for about 1 hour before serving. Garnish with whipped cream and place a lemon wedge beside it (if needed). Pour orange sauce on the pie or spread under the pie. Serve chilled.
