Ingredients Serving: 2

  1. Coliflower sliced 1 cup
  2. Carrot sliced thinly 1/2 cup
  3. French beans sliced 1/2 cup
  4. Green peas 1/2 cup
  5. Potatoes 2 Nos
  6. Ginger grated 1 teaspoon
  7. Garlic grated 1 teaspoon
  8. Cumin seeds 1 teaspoon
  9. Yoghurt 2 tablespoon
  10. Corriador powder 1/2 teaspoon
  11. Turmeric powder 1/2 teaspoon
  12. Chilli powder - 1/2 teaspoon
  13. butter 1 tablespoon
  14. Milk 2 tablespoon
  15. Olive oil 1 tablespoon
  16. Salt
  17. Pepper
  18. For herbed yogurt -
  19. Yoghurt- 1/2 cup
  20. Coriandor Leaves grated- 1 teaspoon
  21. Cumin powder- 1/2 teaspoon
  22. Garlic minced- 1/4 teaspoon
  23. Lemon zest grated 1/4 teaspoon
  24. Lemon juice - 1 teaspoon
  25. Coriandor powder- 1/4 teaspoon
  26. Chilly powder- 1/4 teaspoon
  27. Turmeric powder- 1/4 teaspoon
  28. Salt to taste

Instructions

  1. Grind ginger garlic salt cumin seeds , corriandor powder, chilly powder, turmeric powder and yoghurt. Marinate cauliflower with it for minimum 20 minutes
  2. Meanwhile pressure cook potatoes for 5 min
  3. Drain the potatoes well and Mash it with fork to a smooth paste
  4. Add melted butter and milk into it and mix well
  5. Garnish it with Coriandor Leaves. Mashed potatoes is ready
  6. Place cauliflower and other vegitables in a baking pan and coat with olive oil salt and pepper
  7. Grill over medium heat untill desired tenderness (10-15 minutes)
  8. Meanwhile let us make herbed yoghurt. Take a bowl combine yoghurt , lemon zest and juice, garlic, cumin powder , coriander powder, chilly powder, turmeric powder, coriander leaves and salt to taste
  9. When grilling is done take a serving plate place mashed potatoes then grilled vegitables with a generous dollop of the herbed yoghurt on top
