Ingredients Serving: 2

  1. For the Veggie patty:
  2. Rolled oats. 1/4 cup
  3. Soya Chunks. 1/2 cup
  4. Quinoa. . 1/2 cup
  5. Dried Italian herbs 2 teaspoons
  6. Carrot. 1/4 cup grated
  7. Beetroot. 1/4 cup grated
  8. Onion. 1 medium
  9. Green peas. 1 tablespoon
  10. Flaxseed meal. 2 tablespoon
  11. Lukewarm water. 6 tablespoon
  12. Green chillies. 1/2 teaspoon chopped
  13. Coriander. 1tablespoon chopped
  14. Breadcrumbs. 1/4 cup or more if needed
  15. Oil. to grill patties
  16. For the sandwich
  17. Salt and pepper to taste
  18. Baguette bread. 1
  19. Butter. or Cheese spread. 2 tablespoon
  20. Mayonnaise. 1/4 cup
  21. Honey Mustard sauce. 1/4 cup
  22. Tomato Sauce. 1 tablespoon
  23. Vegetable of choice. 1 1/2 cups (onions, cucumber, zucchini, bell peppers, yellow and red cherry tomatoes, zucchini)
  24. Jalepenos or Olives. 1 tablespoon
  25. Salt to taste
  26. Lemon juice or Vinegar and salt to marinate vegetables
  27. Pine nuts. optional. 1 tablespoon

Instructions

  1. Heat pan, add broken wheat, oats, soya chunks and dry roast for 5-6 minutes and cool
  2. Mix lukewarm water to flaxseed meal, mix well, keep aside for 10 minutes to make flax 'eggs'
  3. cut vegetables for the sandwich in shapes of your choice either slices or Long strips.
  4. Marinate in salt-lemon juice or vinegar mixture to retain Colour.
  5. Mix together in a separate bowl the vegetables mentioned for the patties
  6. Grind roasted ingredients to a slightly coarse powder
  7. Add to the vegetables, salt and pepper and the herbs.
  8. Add the flax 'eggs'. Mix well adding chillies and coriander leaves
  9. Add bread crumbs. Make into tight dough.
  10. Pinch out small portions, make balls and flatten into thin Long discs.
  11. Heat grill pan or ordinary pan, add oil
  12. Place patties and grill on both sides till brown and crisp.
  13. Remove into tissue paper.
  14. Take the bread and cut horizontally in the middle, keeping one end of it intact, so that it opens like a box.
  15. Heat gently on a griddle.
  16. Take out, apply butter or cheese spread on both sides
  17. Apply the marinated vegetables in any order of your liking
  18. Spread the mustard and tomato sauces and the mayonnaise
  19. Place the grilled patties and close the sandwich.
  20. Serve
