ABOUT Eggie veggie bowl RECIPE

Have a crackling start to the day with eggs baked with vegetables. such a simple way to get proteins and vegetables in one bowl

Ingredients Serving: 2

  1. Spinach (Palak) 10 leaves
  2. red/yellow peppers 1/2 each chopped
  3. green onions 2 teaspoons
  4. pickled jalapeno (optional)
  5. zucchini 1/2 finely chopped
  6. mushroom 1/2 cup
  7. eggs 3
  8. milk 2 tablespoons
  9. black pepper (a pinch)
  10. Salt to taste
  11. Italian dried herbs
  12. Red chilli flakes (optional)

Instructions

  1. Chop vegetables spinach, red/yellow peppers, green onions, pickled jalapeno and zucchini, mix it all together, set aside
  2. Crack 3 large eggs, add 2 tbsp milk, salt, black pepper, italian dried herbs. If you want more spice add red chilly flakes.
  3. Next Grease the ceramic bowl, add the prepared vegetables and pour the egg mixture and Microwave for 3-5 min,
  4. check if the eggs are cooked all the way through. Your healthy eggie veggie bowl is ready. It’s a perfect breakfast for a busy morning.
