ABOUT All Green Desi Fried Rice(for expectant mothers & elders) RECIPE

Greens like spinach, kale etc not only are filled with antioxidants, they provide roughage and most importantly vitamin K. This recipe attempts to bring all the possible greens in your fridge to good and a yummy different use. Very clearly this recipe is beneficial for all, especially elders and expectant mothers

Ingredients Serving: 2

  1. 200 gms long grain white rice/ brown Basmati rice cooked
  2. 20 gms spring onion greens cleaned,chopped finely
  3. 50 gms baby spinach cleaned,chopped fine
  4. 50 gms fenugreek leaves cleaned, chopped fine
  5. 50 gms kale/ any other green leaves of your choice chopped fine
  6. 100 gms fresh/frozen green peas
  7. 1 small onion chopped
  8. 1 tbspn cumin seeds
  9. A pinch of asafoetida
  10. salt as needed
  11. 50 gms coriander leaves chopped
  12. 2 tbsn olive oil
  13. 1 tbn black pepper powder
  14. 1 tbsn ginger garlic paste
  15. 2 Green chillies finely chopped
  16. Juice of 1 lemon

Instructions

  1. Add a tbsn of oil in a wok/ non stick pan and let it heat
  2. Add cumin seeds and asafoetida and wait till cumin splutters
  3. Next add chopped green chillies, onions and sauté till translucent
  4. Throw in the green peas, add ginger garlic paste and sauté for another minute or so
  5. Finally add the spinach, fenugreek, kale leaves and spring onion greens
  6. Combine well and sauté till the green are wilted a bit
  7. Add the rice and mix well
  8. Sprinkle salt to taste, lemon juice and black pepper powder
  9. Combine all ingredients well and take of heat after adding chopped coriander leaves
  10. Serve hot with your favourite curries/raitas
