Dried Bombay duck or Loitta Sutki fish jhura is a famous dish in Bangladesh.In this dish dry fish is cooked with good amount of red chilli and garlic. It's a very spicy dish. My family loves it very much.

Ingredients Serving: 4

  1. Dry Bombay Duck Fish (Loitta sutki)-200 gram
  2. Cumin seeds-1 teaspoon
  3. Whole Dry red chilli-1 piece
  4. Onion finely chopped-1 large
  5. Garlic paste-6 tablespoon
  6. Ginger paste-1 tablespoon
  7. Tomato chopped-1 medium
  8. Potato chopped-1 medium
  9. Red chilli paste-4 tablespoon
  10. Green chilli chopped-2 pieces
  11. Turmeric powder-1/2 teaspoon
  12. Cumin powder-1 teaspoon
  13. Coriander powder-1 teaspoon
  14. Mustard oil-1/2 cup
  15. Salt to taste
  16. For garnishing, green chilli

Instructions

  1. First soak the dry fish for 10 minutes in hot water.
  2. When it gets soft,wash it cleanly because in dry fish, there is too much impurity.
  3. Separate the fish head and throw out the head.
  4. Then heat mustard oil in a pan.
  5. Add cumin seeds and dry red chilli in it. Let it crackle.
  6. Then add onion chopped and allow it to fry until golden brown.
  7. Add ginger and garlic paste. Saute until it's raw smell is gone.
  8. Add chopped tomato, potato and green chilli chopped.
  9. Now add red chilli paste.
  10. Add salt to taste.
  11. Add cumin powder and coriander powder. Cook the masala until oil is coming out.
  12. Add washed dry fish and try to smash the fish with the help of your spoon/spatula.
  13. Cover it with a lid. let it cook in low heat for 25-30 minutes.
  14. In between stir it and add splash of water as needed.
  15. Cook it until oil comes out from fish and fish will be just dry.
  16. Then switch off the flame. Enjoy it with hot steamed rice.
