ABOUT Homemade Schezwan Sauce RECIPE

Schezwan Sauce is a spicy sauce used in variety of chinese recipes like Fried Rice, Noodles etc. Its best to make it at home and the sauce is as spicy and tangy as store brought one

Ingredients Serving: 9

  1. Dry red chilli destalked and desseded -50 gm
  2. Garlic cloves(finely chopped)-18-20
  3. Ginger(finely chopped)-1 inch
  4. Tomato Chilli Sauce-2 tsp
  5. 2TBSP WHITE VINEGAR
  6. 6-7 tbsp oil
  7. Salt to taste
  8. 1 tsp soy sauce
  9. 1 tsp sugar (optional)
  10. Water as required for sauce consistency

Instructions

  1. Soak red chillies in luke warm water for 30 minutes. Drain water and grind red chillies to fine paste
  2. Heat a Non stick pan, Heat oil. Add ginger garlic and saute until raw aroma goes away. Oil helps in storing for longer duration
  3. Add red chilli paste and saute until the raw taste goes away. Chinese dishes are always cooked on high flame.
  4. This will be like a paste. Add water as we need to make sauce. Mix everything well. Add vinegar, salt, sugar and sauces. Mix well. This will add color , reduce pungent taste, add sour and tangy taste and make it last longer
  5. Cover and cook on low- medium flame for 15 minutes, keep stirring in between. The oil will start leaving the sides. Cook for another 3-4 minutes without lid. Switch off .Allow it to cool. Bottle and store in cool dry place.
