These cookies are made with fresh pumpkin pulp and a stand out flavour of cinnamon

Ingredients Serving: 4

  1. 1 cup all purpose flour
  2. 1/4 cup chickpea flour
  3. 1/2 cup castor sugar
  4. 1/2 cup butter (soften)
  5. 1/4 cup pumpkin puree
  6. 1/2 tsp Salt
  7. 1/2tsp Cinnamon powder
  8. 1/4 tsp baking powder

Instructions

  1. In a large bowl seive together all purpose flour, chickpea flour, salt, cinnamon and baking powder
  2. In a mixing bowl add butter and sugar and whisk until light and fluffy.
  3. Add in the pumpkin puree and whisk again.
  4. Slowly mix in the flour mix to the wet ingredients mix.
  5. Now refrigerate the dough for 30 minutes.
  6. Scoop out the dough into lemon sized balls.
  7. Space the cookies about 2 inches apart in a greased baking tray.
  8. Freeze the tray for 15 minutes.
  9. Now bake the cookies for 25-30 minutes in a preheated oven at 180c.
  10. Take them out of the oven and keep on a wire rack to cool.
  11. Warm cookies will be little soft but shall harden once cooled.
  12. Store in an airtight container.
