Spooky cookies are popular during Halloween parties. Halloween is observed in number of countries in the month of Oct. Different types of cookies and variety of food is been prepared and served on that day. In this recipe, I have prepared cookies using Pumpkin puree and oil. It is very easy recipe and tastes awesome. Cookie can be prepared of any desired shape.

Ingredients Serving: 15

  1. Pumpkin Puree – ½ cup
  2. Oil – 3/4th cup
  3. Vanilla Essence – 1tsp
  4. Sugar – ¾ -1 cup
  5. Flour or Maida – 2 ½ cups
  6. Nutmeg Powder- 1/4th tsp
  7. Cinnamon powder – ½ tsp
  8. Clove – 3-4 no’s (coarsely powdered)
  9. Baking Powder– 1 1/4th tsp
  10. Baking Soda – ½ tsp
  11. Salt – ½ tsp
  12. Almonds – 20-25
  13. Fruit Jam – 1/4th cup (Optional) for garnishing.

Instructions

  1. Take Pumpkin, peel and cut into 2-3 medium pieces. Microwave it for 3-4 minutes. sprinkle some oil while microwaving.
  2. Once cooked blend till puree and sieve it. keep aside.
  3. In a bowl mix oil, vanilla essence and sugar. Whisk well with the help of hand whisker till fluffy. Do not let the sugar crystals dissolves completely.
  4. In another bowl, sift Flour, baking powder and baking soda twice. Add cardamom, nutmeg, and clove powder. Add salt. Mix well.
  5. Mix all dry ingredients into wet mixture. Mix thoroughly. Make a soft dough. Keep
  6. Preheat oven at 160degree C.
  7. Keep baking tray ready with parchment paper or butter paper.
  8. Pinch a ball from the dough. Roll it between palms into 4-5“long fingers and about ½” thick.
  9. Firmly press an almond into the end of each finger to look it like fingernails.
  10. Make horizontal cuts 1/4’deep using fork or knife at the start and end or in the middle to make knuckles.
  11. Simple cookies of any shape can also be prepared.
  12. Bake cookies in preheated oven for 17-18 minutes or until light brown. Remove it and let it cool on wire rack. Once cooled cookies will become little hard and crispy.
  13. Garnish it with fruit jam or Transfer it into airtight container. Consume within 2-3 days
