Ingredients Serving: 2

  1. Potatoes 2 medium size, chopped
  2. sweet potato 1 medium size , chopped
  3. green brinjal 2 small size , chopped
  4. Surti papadi 50 grams
  5. green tuvar 50 grams
  6. Salt as per taste
  7. Dry parsley as required
  8. sesame oil 6 tbsp
  9. coriander leaves 1/4 cup
  10. green garlic 1/4 cup
  11. green chilies 3
  12. Salt to taste
  13. jaggery powder 2 tbsp
  14. limonia acidissima 2 tbsp
  15. Water as required
  16. 4 tbsp sev to sprinkle
  17. Banana leaves as required

Instructions

  1. Grind coriander, green garlic, green chilies,salt,limonia assidisima, jaggery powder, jeera, water to form smooth chutney
  2. In earthen pot, layer tablets of soil, arrange some banana leaves and put big cotton cloth on it
  3. Bottom/First Layer: add Surti papadi with oil, salt and ajwain and mix well
  4. for second layer: mix and add potatoes,sweet potatoes, green brinjal with oil, salt and ajwain
  5. for third layer: Mix and add green tuvar with oil, salt and ajwain
  6. Cover vessel with cotton cloth and seal by aluminium foil
  7. Cook on gas for 55 minutes
  8. Mash the entire mixture , add 3 tbsp sesame oil and mix well
  9. Add green chutney and mix well
  10. Add undhiya mix into tart and sprinkle sev.
  11. serve with butter milk
