ABOUT Chayote Squash Payasam RECIPE

Chayote is an edible plant belonging to the gourd family Cucurbitaceae, along with melons, cucumbers and squash. Globally it is known by other names including christophine cho-cho, pipinola, pear squash, vegetable pear, or choko(source:Wiki). Recipe inspired from a food group.

Ingredients Serving: 4

  1. Chayote Squash 1 medium
  2. 2 cups grated coconut
  3. Jaggery 2-3 cubes
  4. Chiroti rawa /rice flour 1 tsp
  5. Salt a pinch
  6. Cardamom powder 1 tsp
  7. Roasted cashews 1/4 cup

Instructions

  1. Peel and remove the inner seeds, if any. Chop Chayote Squash into thin small pieces
  2. Grind coconut with water and extract thick coconut milk
  3. Add little water and extract second thick and third thin coconut milk
  4. Cook the squash with third coconut milk and salt.
  5. Add jaggery and stir till it melts.
  6. Add the second extract of coconut milk and boil.
  7. At this stage add chiroti rawa and mix well.
  8. Pour the thick and first extract of coconut milk, boil once and add cardamom powder. Mix well
  9. Garnish with roasted Cashews. Serve hot or cold as desired
