Light, cheesy, freshly made pizza dough topped with yellow squash, cheese and garlic. A unique pizza to have for a weekday lunch or dinner.

For the dough: In a mixing bowl take flour, salt and mix it well.
In a small bowl take 1/4 cup of lukewarm water, add yeast and sugar mix it well and let it rest for 5 minutes.
After 5 minutes add the yeast water to the flour and olive oil and mix it untill it forms a sticky dough.
Take out the dough on a floured surface and knead a soft dough. (It took me around 10 minutes to knead a soft dough)
Keep the dough in oil brushed bowl, cover with a cling wrap and let it rest for 1 hour.
After 1 hour, the dough will double in size.
Preheat the oven at 180°C and keep a sheet of butter paper on the baking tray and spray oil over it.
Take out the dough on a flat surface.
Cut the dough in half.
Punch the dough, drizzle some olive oil and start rolling the dough gently with your fingers and make it evenly flat from all sides.
Cut the yellow squash and lemon in thin slices. Then cut each slice in half moon.
Top pizza dough evenly with thin slices of zucchini, lemon, minced garlic, mozzarella cheese, salt and finely chopped parsley leaves.
At last drizzle few drops of olive oil.
Bake it in oven at 180°C for 15 minutes.
Check the pizza after 10 minutes.
Cook till its golden brown and the cheese is nice and bubbly.
Once done season with some oregano and red chilli flakes. Serve hot. Enjoy!
