Ingredients Serving: 3

  1. Bitter gourd 3 medium sized
  2. Chana dal (soaked for 4 to 5 hours)
  3. Sliced onion 1 medium
  4. Sliced tomato 1 medium
  5. Coriander powder 1 tsp
  6. Red chili powder 1 tsp
  7. Cumin powder 1/2 tsp
  8. Garam Masala powder 1/2 tsp
  9. Fenugreek seed 6 to 7
  10. Kalonji 1/4 tsp
  11. Turmeric powder 1/2 tsp
  12. Desi ghee 1/2 tsp
  13. Oil 4 tbsp
  14. Water 3 cups
  15. 3 tbsp chopped Coriander leaves for garnishing

Instructions

  1. Slice bitter gourd in 2 halves lengthwise, remove seeds and wash thoroughly
  2. Boil bitter gourd with salt and enough water for 10 minutes to reduce bitterness.
  3. Heat oil in a wok, add fenugreek seed , saute for few seconds add kalonji and cook few seconds.
  4. Add onions, saute till golden brown . Add chana dal, masalas and salt . Mix well
  5. Now add tomatoes and cook for 4-5 minutes. .
  6. Add 1 cup water and cook until dal is done. Finally add ghee and mix
  7. Stuff this mixture into bitter gourd.
  8. Garnish with coriander leaves. Serve hot with parathas.
