cheesy chicken Fritters is a crispy ,cheesy snack with the combination of bite size chicken pieces and cheese.The cheese in the batter forms part of the outer crust and makes it crisp

Ingredients Serving: 6

3 large chicken breast
2 eggs
5 tbsp mayonaise
1/3cup plain flour
1 1/2 tbsp coriander leaves
1 1/3cup shreded mozrella cheese
1/2tsp salt
1/2tsp pepper
2 tbsp oil
1/2tsp mixed herbs

Instructions

Dice the chicken breast into small bite size pieces
Combine together egg ,mayonaise,coriander leaves , cheese ,mixed herbs,flour,salt and pepper . stir until well combined
Then add in the diced chicken cubes to the batter and marinate .
Heat oil in a pan.add the chicken mixture a heaping Tbsp at a time (I used a flat ice cream scoop). Pat down fritters with the back of your spoon to flatten slightly.
cook both sides till golden brown.
serve with your favourite dip.
