Ingredients Serving: 4
For Nachos:-
1 cup cornmeal
1/2 cup wheat flour
1 teaspoon salt
1/2 teaspoon turmeric powder
1/2 teaspoon oregano
1/2 teaspoon paprika
2 tablespoon oil
¹/2 cup lukewarm water
1 teaspoon chaat masala
For Cheesy Chicken:-
300 grams boneless chicken,cut into strips
1 tablespoon oil
1 tablespoon crushed garlic
1 onion chopped
1 medium sized tomato,cut into small cubes
Salt to taste
1-2 stalks spring onion greens, finely chopped
2 teaspoon crushed black peppercorns
1/2 medium green capsicam,cut into small cubes
Grated Processed Cheese as required
Coriander leaves for garnishing
Instructions
In a bowl,add cornmeal,wheat flour,salt , turmeric powder, oregano,paprika,oil, lukewarm water and combine the ingredients well.Knead to make stiff dough.
Divide the dough into equal portions.Place each portion on the worktop, drizzle some oil on top and roll out to make thin sheets.
Heat oil in a pan. Cut triangular shapes with a triangular shaped cookie cutter from these thin sheets and deep fry them in hot oil till golden and crisp.
Drain on absorbent paper and place the nachos in a dish, sprinkle chaat masala on top while still warm and set aside.
Now pre-heat oven to 180°C. Heat oil in a kadai. Add garlic and saute till golden. Add onion and saute till translucent.
Add tomato, capsicum, mix and cook till soft. Add chicken,mix and cook till done.
Add salt and crushed peppercorns and mix well.Add chopped spring onion greens and cook for 1 minute.
Place some nachos in a baking dish and put chicken mixture on top.
Put some cheese on top of the chicken mixture.
Place the baking dish on a baking tray.Place the baking tray in pre-heated oven and bake until cheese melts.
Take out the baking dish from the oven when it's done. Now garnish with coriander leaves and serve hot.
