Bengali styled slow-cooked egg curry.

Ingredients Serving: 2

  1. Eggs hard boiled 4
  2. Potatoes peeled and diced 2
  3. 4 onion
  4. 2 tomatoes
  5. 4 green chillies
  6. Ginger garlic paste 1 tbsp
  7. 4 cloves
  8. 1 stick cinamon
  9. 2 black cardamom
  10. 4 dried red chillies
  11. 1 bay leaf
  12. 1 tsp cumin seed
  13. Turmeric powder 1 tsp
  14. Red chilli powder 1 tsp
  15. Coriander powder 1 tsp
  16. Garam masala powder 1 tsp
  17. Salt to taste
  18. Sugar 1/2 tsp

Instructions

  1. Apply some turmeric and red chilli powder on the eggs and potatoes. Fry till golden and keep aside.
  2. Grind the onion, ginger-garlic paste, tomato, green chillies, cloves, cinnamon, cardamom and 2 dried red chillies into a paste.
  3. In a pan, heat oil and add bay leaf, cumin seed and 2 dried red chillies. Add the onion paste. Sauté for a while.
  4. Add powdered spices and mix well. Add salt and sugar. Mix. Keep adding littke water at regular intervals. Keep mixing. Cook till oil separates.
  5. Add fried potatoes and eggs. Mix. Cook covered for 5 min.
  6. Add 1/2 cup water and mix. Cover and cook for 10 min.
  7. Serve hot.
