Paniyaram is a snack item which can be prepared very quickly. It can be eaten as a light breakfast or dinner also. Kids will love this as it has got a crispy crust and a soft inner.

Grind raw rice, boiled rice, Leftover rice, poha and make a batter which is of dosa batter consistency.
Heat a pan, add oil. When hot add mustard , Bengal gram, shallots, green chillies, curry leaves , grated carrot
Saute till the onions turn translucent . Let it cool. Add the mixture to the batter.
Heat a paniyaram pan. Add 2 drops ghee in each mould and pour a spoonful of batter into each hole.
Keep the heat on medium. After the edges turn golden brown and crisp, flip the paniyaram to the other side and let it cook for a minute
Remove from pan, serve hot with Chutney or sauce
