ABOUT Rasbhari/ Imarti/ Motadana RECIPE

Its a very famous sweet from Jaipur (Rajasthan). Which is made of washed Split Black lentil.

Ingredients Serving: 8

  1. Split Black Lentil (Urad Daal) 1 Cup
  2. 8-10 black cardamom Seeds
  3. Salt a pinch
  4. Yellow Food colour 1 pinch
  5. Oil for frying
  6. *For sugar syrup*
  7. 2 cups sugar
  8. 1 cup water
  9. Few Kesar strands
  10. 2 green cardamom

Instructions

  1. Wash and soak black lentil overnight.
  2. Next morning drain out the water and wash the daal properly.
  3. Add soaked daal into a mixer jar.
  4. Add a pinch of salt and black cardamom seeds and grind it into smooth paste.
  5. Add this paste in a big bowl.
  6. Add yellow food colour and whisk it till light and fluffy.
  7. On other side in a sauce pan add sugar and pani to make sugar syrup.
  8. Make sure sugar syrup should be thick but not 1 string.
  9. When sugar syrup get ready. Add saffron and green cardamom powder and keep aside.
  10. In a thick bottom kadhahi heat up oil for frying.
  11. Now using 2 spoons make the shape of rasbhari.
  12. Fry rasbhari in hot oil on medium low flame till light brown.
  13. Take out on a tissue paper.
  14. Soak all the fried rasbharis in sugar syrup for 3-4 hrs.
  15. Your tasty juice rasbharis are ready to serve.
