The famous sweet of north india, crunchy and sweet at the same time.

Ingredients Serving: 10

  1. Urad dal - 2 cups
  2. Rice flour - 1/4 th cup
  3. Orange color - 1/2 tsp
  4. Refined oil
  5. Sugar syrup :
  6. Sugar - 3cup
  7. Water - 2 cups
  8. lemon juice - 1 tbsp
  9. Elaichi powder - 1/2 tsp

Instructions

  1. 1. Soak the Urad dal overnight and make a fine paste with some water.
  2. 2. Now mix the rice flour to the Urad dal mix and whisk it till the mixture is fluffy and aerated. It might take about 20 minutes.
  3. 3. Make the sugar syrup of 2 string consistency, using the water , sugar. Add the Lemon juice and elaichi powder.
  4. 4. Heat a pan with ample amount of oil, pour the batter into the piping bag. Pipe the mixture in circles using the piping bag
  5. 5. Fry on both sides and dip them in sugar syrup. Serve.

In kerala we make it, as jilebi. The yellow one with maida ,we call it jagiri. Looks nice.
