Balushahi is a traditional dessert made of maida, and are deep-fried in ghee or oil and then dipped in sugar syrup

Mix maida and baking soda together .
Add ghee to it and mix to get crumbly texture
Add curd and water . water and curd should be ice cold .
Collect the dough together to form a boule. Do not overknead it .
Cover it and leave aside for 45 minutes
Make sugar syrup by boiling 1 cup of water with 2 cups of sugar . add food color and cardamom pwd. Boil for 5 minutes .
Divide the dough into 30 parts.
Shape them into a ball and make an indent in centre.
Heat oil in a karahi to medium hot and deep fry balushahi on low flame. They will puff up on their own and start floating on surface. Keep on pouring hot oil over baalushahi .
It will take mimimum 20 minutes to fry each batch.
When cooked take them out and allow them to cool.
Soak them in sugar syrup for 2 minutes
Take them out and garnish .
