ABOUT Baalushahi RECIPE

Balushahi is a traditional dessert made of maida, and are deep-fried in ghee or oil and then dipped in sugar syrup

Ingredients Serving: 10

  1. Maida 3 cups
  2. Baking soda 1/2 teaspoon
  3. Ghee 100 grams
  4. Curd 4 tablespoon
  5. Chilled water 5 tablespoon
  6. Sugar 2 cups
  7. Water 1 cup
  8. Cardamom powder 1 teaspoon
  9. Food color orange few drops
  10. Pista for decoration. Optional

Instructions

  1. Mix maida and baking soda together .
  2. Add ghee to it and mix to get crumbly texture
  3. Add curd and water . water and curd should be ice cold .
  4. Collect the dough together to form a boule. Do not overknead it .
  5. Cover it and leave aside for 45 minutes
  6. Make sugar syrup by boiling 1 cup of water with 2 cups of sugar . add food color and cardamom pwd. Boil for 5 minutes .
  7. Divide the dough into 30 parts.
  8. Shape them into a ball and make an indent in centre.
  9. Heat oil in a karahi to medium hot and deep fry balushahi on low flame. They will puff up on their own and start floating on surface. Keep on pouring hot oil over baalushahi .
  10. It will take mimimum 20 minutes to fry each batch.
  11. When cooked take them out and allow them to cool.
  12. Soak them in sugar syrup for 2 minutes
  13. Take them out and garnish .
