Ingredients Serving: 3

  1. Gram flour 1/2 glass
  2. Sugar 1tablespoon
  3. Salt 1/2 teaspoon
  4. Eno 3/4 pouch
  5. Lemon-1
  6. Mustard seeds
  7. Curry leaves
  8. Ghee
  9. Water-2 glasses
  10. Ginger
  11. Green chillies

Instructions

  1. Add gram flour,sugar,salt,red chilli powder in a bowl,
  2. Make ginger and green chilly water by adding them in the grinder with a glass of water and churn it,
  3. Strain this water in the dry mixture slowly.
  4. Give it a rest for 10 minutes,
  5. Meantime,preheat the steamer for 10 minutes
  6. Add eno in the batter and on the top of the eno squeeze half lemon on it mix gently and pour it in steamer safe utensil or in idli moulds and set the timer for 25 minutes
  7. In the meantime,hot ghee in a pan add mustard seeds,curry leaves and green chillies sim the gas and saute them until they change their color i.e white patches on the chillies,
  8. Add water,sugar and salt and let the water reduce a bit
  9. Check the dhokla by inserting a knife or a toothpick in it,if it comes clean then it's ready and if it's not then steam it for more couple of minutes,
  10. Give it a rest of 3-4 minutes then add the water spoon wise,
  11. When its cooled down keep it in a fridge and serve chilled.
