Heat a pan with oil, fry cubed onions and capsicum for 2 to 3 minutes. and when they begin to smell good, set them aside in a plate.
In pan add red chili and cumin seeds
when the cumin begin to crackle add onions and fry till golden brown.
then add ginger garlic paste and fry till the raw smell dissapears
now add chicken and saute for 2 mins
now cover and cook on a low flame till it is soft cooked and its own moisture. Avoid adding water.
then add garam masala and red chilli powder and saute for another 3 minutes
add tomato puree and salt. stir and cook uncovered till the raw smell of tomato puree goes away. the gravy thickens.
when the chicken is fully cooked add onions and capsicums.
mix and cook for 4 mins.
add cashew paste. stir well. add kashmiri red chilli powder if needed to adjust spice and color. cook till the gravy thickens and reached desired consistency.
finally add garam masala and coriander leaves and mix.
