khandvi is a very famous gujrati delicacy. iIts little tricky to make but not hard at all. It's basically made out of chickpeas flour but today I have tried it first time making with sabudana. We can use this recipe in fasting. It's very simple and easy recipe which we can make it in microwave.

Ingredients Serving: 4

  1. 1 cup sabudana
  2. 1 cup yogurt
  3. 1 medium size red bell pepper
  4. 1 tbsp Green chilly and ginger paste
  5. salt to taste
  6. 1 tbsp mustard seeds
  7. 1 tbsp sesame seeds
  8. 1/4 tsp hing
  9. 2 tbsp oil
  10. 1 tbsp chopped coriander
  11. 1 tbsp grated coconut

Instructions

  1. Take 1 cup sabudana and wash it for 2-3 times
  2. Add 1/2 cup yogurt in 1/2 cup water and soak sabudana in this mixer for 2-3 hours.
  3. Take sabudana and red bell pepper in a grinder and grind it using 2 cup water and make a fine batter.
  4. Add green chilly and ginger paste. Add 1/2 cup of water and salt to taste. mix it really well.
  5. Take a batter in microwave safe bowl and microwave it on high power for 2 mins.
  6. After 2 mins take it out from microwave and mix it really well making sure there is no lumps in it.
  7. cook it again in microwave for total 6-7 minutes mixing it every 2 minutes.
  8. On a aluminum foil apply 1 tsp oil and spread cooked batter very thin.
  9. Let it cool down for 10 mins.
  10. cut it lengthwise in around 1 inch strips.
  11. roll it and put it in the plate.
  12. Take 1 tbsp oil and heat it. Add mustard seeds and once it starts sputtering add sesame seeds and hing in it.
  13. Turn off the gas and add seasoning on rolled khandvi.
  14. Garnish it with grated coconut and chopped coriander.
