ABOUT Mushroom tawa masala RECIPE

Mushroom is one of the favorite ingredients of my little fussy eater. So today I thought to try something new instead of regular matar mushroom, kadhai mushroom or other mushroom curries I used to make.  Here is mine version of mushroom tawa masala, little tangy and spicy side dish for mushroom lovers.

Ingredients Serving: 5

  1. 250 gms button mushroom, sliced
  2. 1 big onion, cubed
  3. 2 cup colored capsicum, cubed
  4. 2 medium tomatoes, sliced
  5. 1 big carrot, cubed or round sliced
  6. 2 medium onion, finely chopped
  7. 3-4 green chilies , finely chopped 
  8. 2 tsp ginger garlic paste
  9. 1/2 cup fresh thick yogurt/ curd, beaten
  10. 1/2 tsp turmeric powder
  11. 2 tsp coriander powder
  12. 1/4 tsp garam masala powder
  13. 1 tsp kasoori methi, crushed between palms
  14. Salt to taste
  15. Oil
  16. For tawa masala:
  17. 1 tsp coriander seeds
  18. 1 tsp fennel seeds
  19. 1/4 tsp fenugreek seeds
  20. 1/4 tsp black pepper corns
  21. 1/4 tsp cumin seeds
  22. 5-6 cloves
  23. 3-4 green cardamom
  24. 1/2 inch cinnamon stick
  25. 1 pinch asafoetida ( heeng)
  26. 2 dried red chilies ( whole)

Instructions

  1. First of all dry roast all the ingredients given below tawa masala section till aromatic. But be careful , not to burn your spices. Let it cool completely and grind to coarse powder. Keep it covered aside for later use.
  2. Heat some oil in a wok or sufficient big tawa. Add finely chopped onion and chilies, let them fry till transparent. Add ginger garlic paste and saute for 2 mins. Now add sliced carrots and saute for 2-3 mins and cover to cook for 4-5 mins. The carrot should be cooked but still have crunch not very mushy.
  3.  Now add turmeric powder, coriander powder and garam masala powder, saute for 2 mins and add diced onions and mushroom. Saute for 3-4 mins and cover to cook for another 3-4 minutes or till mushroom shrinks. Now add tomatoes and capsicum, followed by prepared tawa masala.
  4.  Saute them for 3-5 minutes and again cover to cook for 3-4 minutes.  * You can cook for more time if you like very soft texture of your veggies. I like little crunchy texture so cooked as it.  Now add well beaten yogurt, stirring constantly to avoid its cuddling . You can add some water at this point , if you want curry in it.  Adjust salt and let it simmer for 5 minutes. Finally add crushed kasoori methi and mix well. 
  5. Your lip smacking side dish is ready to go with roti/ naan/ paratha or rice. 
  6. Every mushroom lover will definitely fall in love with this aromatic delicious dish. 
  7. You can prepare it for any party or for guests at your home.
