Clean and devein the prawns. Put the prawns in a bowl and sprinkle salt and turmeric powder on them. Set them aside.
Roast the dry red chillies, coconut, green chillies, cumin seeds, mustard seeds, peppercorns, cardamom, turmeric, cloves and cinnamon till they begin to release their aroma. Remove from heat and cool. Grind the ginger, garlic and roasted spices into a smooth paste using the vinegar.
Heat the vessel on a medium flame, add oil, asafoetida, curry leaves, cumin seeds, mustard seeds, now add onions, fry the onions till light brown.
Add chopped tomatoes and fry until the tomatoes are soft.
Now add marinated Prawns. Mix well.
Now add the balchao masala. Mix well.
Cook for 5 minutes. Your Prawns Balchao is ready.
Wash the brinjals. Leave the stalk on and slit them from the base to near the stalk taking care not to cut through.
stuff the brinjals with the prawns balchao and keep aside.
Heat the oil in a vessel and add the chopped onions and fry till light brown on medium heat. Add the remaining balchao masala and stuffed brinjals and fry them on all side for 10 minutes.
Add 1 cup water. Cover and cook on low heat for 5 minutes stirring occasionaly in between to prevent sticking. Add chopped fresh coriander.
Now your delicious and spicy prawns balchao stuffed brinjal is ready.
Serve hot with rice roti aka bhakari, Chapatis or ghavane.
