Sakara is an authenic odia cuisine and one of the dishes served in the Chappanbhog. It is generally made up of water gourd. But i am preparing my version with pumpkin

Ingredients Serving: 4

  1. Chopped pumpkins 2 cups
  2. Jaggery 1/2 cup
  3. Grated coconut 1 cup
  4. Tamarind pulp 2 teaspoon
  5. Fennel seeds - 1 tsp
  6. Fenugreek seeds - 1tsp
  7. Mustard seeds - 1tsp
  8. Dry red chillies - 2
  9. Curry leaves 1 strand
  10. Oil or ghee
  11. Salt

Instructions

  1. Heat 3 teaspoon oil in a pan.
  2. Add fennel seeds,mustard seeds and fenugreek seeds.
  3. After sputtering of seeds, add red chili and curry leaves.
  4. Then add chopped pumpkins and salt to taste.
  5. Cover the pan with lid.
  6. Cook the pumpkin well.
  7. Then add jaggery,tamrind pulp and grated coconuts.
  8. Mix well.
  9. Cook the sakara in open pan for 3-4 minutes.
