Ingredients Serving: 6
5-6 tbsp oil
1/2 tsp cumin seeds
1 Whole red chilli
2 Bay Leaves
1 star anise
5-6 cinnamon stick
5-6 cloves
1 black cardamom
2-3 tbsp almonds and cashews chopped
1 tbsp minced garlic
1 tbsp grated Ginger
1 LARGE ONION CHOPPED
1 small bowl carrots
1 medium bowl peppers chopped
1 medium bowl french beans chopped
1 small bowl baby corn chopped
1 small bowl green peas
1 large bowl cauliflower diced
3 medium tomatoes chopped
3/4 tsp garam masala
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/4 tsp cumin powder
1 tsp kashmiri red chili powder
Salt to taste
fresh coriander leaves chopped
Juliennes of almonds
Instructions
Start to heat oil in a kadhai. Add cumin seeds and let it splutter.
Add the whole spices...cook for around 30 secs...add the almonds and cashews cook till it turns golden..
Add the chopped onion...sauté till it turns golden...add the minced garlic and grated ginger and cook till the raw aroma diminishes. ..
Add the peppers...sauté for a minute, followed by carrots, French beans, baby corns, cauliflower, green peas...sauté the vegetable for 3-4 mins on a medium heat....
Add the dry spices...mix it well....sauté for min...add salt to taste....sauté for around 2 minutes...
Add the chopped tomatoes...mix it..reduce the flame to low heat and cover and cook for 5-6 mins..tomatoes should get tender and mix well with the vegetables...
After 5-6 mins open the lid....sauté for 2 minutes....add the chopped coriander leaves....mix it and cook for a minute....mix veg is ready to serve....
While serving garnish with chopped coriander leaves and juliennes of almonds...
